Kheer (rice pudding)
This very nice (but also quite sweet ;) pudding is a great way to finish a long
evening of cooking and dining...
Ingredients
- 100 gm basmati rice, cleaned and drained
- 750 ml milk
- 2-3 pods green cardamom
- 2 tbsp blanched almonds
- a bit of saffron, soaked in some hot milk
- 1 tbsp chopped skinned pistache nuts
- 1 tbsp soaked raisins (optional)
- 2-3 tbsp sugar
Preparation
- heat in a thick-bottomed pan milk, rice and cardamom until it almost boils,
keep at this temperature until the rice is cooked and the grains begin to
fall apart, stirring gently to keep the milk from burning
- add almonds, saffron, pistaches and raisins (if desired) and leave to boil
for 3-4 minutes, add sugar while stirring until it's dissolved
- serve warm or cold
