Aloo methi (fenugreek potatoes)
A nice and sweet side dish.
Ingredients
- 1 tbsp oil
- 1 tsp cumin seeds
- 1 tsp black mustard seeds
- 1 clove garlic, crushed or chopped finely
- 1 cm ginger, chopped
- 2 green chili peppers, slit
- 3 large potatoes, peeled, boiled and cubed
- 1 tomato, skinned and chopped
- 1 tsp red chili powder
- 1 1/2 tsp coriander powder
- 1 tsp garam masala
- 1/2 cup of water
- 1 1/2 cup fenugreek leaves
- 1 tbsp jaggery (palm sugar)
- 1 tbsp sour cream
Preparation
- heat the oil in a kadai or non-stick pan
- add the cumin and mustard seeds, allow to splutter
- add chilies, garlic and ginger and gently fry until garlic is light brown
- add the potato cubes, fry until the potatoes soak up the oil (about 5 mins.)
- add the tomato, leave for a couple more minutes, stirring every now and then
- add water and fenugreek leaves, masalas and jaggery, stir well
- leave to boil for a couple of minutes, then add sour cream, it's done when
it starts boiling again
